GAIM supports logging. It can be done on a one-by-one basis (you press a button and logging starts, press it again and it stops) or on a constant basis (everything is always logged in separate log files based on the person you are communicating with). Unless they've changed the icons since I last used it, the icon for the one-by-one based logging is a picture of a "log" (like... a chunk of a tree) and it found next to the formatting buttons when you are chatting with someone. If you want to do continuous logging it is in the preferences.
The windows version had a small bug that required me to restart it after enabling continuous logging... though this may have been fixed since then.

Never had a problem with DeadAIM, but since I moved to Trillian (propietary SecureIM capabilities, multi-protocol, and logging) and found a skin that suited me I've been very happy. It's got logging as well which does come in very handy at times.
